Looking Ahead to International Cheese Expo: What You Can Expect

The International Cheese Technology Expo (ICTE) is a worldwide gathering of over 3,000 cheese industry leaders, suppliers, marketers, and professionals to share information about the latest in cheese technology, new products, whey opportunities, product safety, marketing and additional issues affecting the industry. Hosts Wisconsin Cheese Makers Association (WCMA) and the Center for Dairy Research (CDR) promise an exciting event. This event takes place April 12 - 14, 2016 at the Wisconsin Center in Milwaukee, WI.
“Without a doubt, this expo will be the biggest and best ever,” said John Umhoefer, WCMA Executive Director. “From the artisan cheesemaker to the long-time industry leader, ICTE has great appeal, with never-before-seen technology, new ideas on emerging industry trends, ample networking opportunities, and recognition of the best in cheesemaking.”
One focus at this year's ICTE will be cheese and food safety. With ever-increasing regulatory requirements, it can be hard for producers and manufacturers to know what is priority. What happens if there is a positive pathogen test in your plant or product? How can you be proactive instead of reactive when it comes to contaminants? Educational events at the show aim to give attendees the resources they need to meet present and future food safety challenges.
Another focus will be on cheese conversion and packaging companies. Maintaining the quality of cheese down the supply chain from producer to consumer will be a topic of discussion. Quality inconsistencies can arise from lack of seal integrity on cheese packaging. Whether a manufacturer decides to package in house or outsource the process, knowing their product will be perfectly packaged on a quality piece of machinery is very important. Proper packaging is an often overlooked but key piece of quality control.
As a locally and privately owned Wisconsin-based company, Viking Masek knows cheese packaging. Whether packaging 5 lb bags of shredded cheese for food service or 16 oz packages for retail sale, we have the packaging solution. Namely, our super sanitary and super fast VFFS Solitaire. At speeds of up to 150 bpm, this continuous motion machine can meet strict dairy standards for sanitation and handle large bulk packages of cheese. This packaging machine will be live at the International Cheese Technology Expo at our booth #603. Our knowledgeable staff will be on site to answer any and all questions you may have about automating your cheese packaging process.
